




Janice’s Jamaican Cabbage and Carrots
Ingredients
1 medium onion sliced
2 large carrots grated
1 tablespoon of vegetable oil
½ a small white cabbage or ¼ a medium one shredded
Salt and black pepper (coarsely ground if possible) to taste
Method
Put the oil in a large deep frying pan or a wide saucepan. Add the onions and cook until tender but not brown. Place the shredded cabbage and grated carrots on top sprinkle with the black pepper and salt to taste. Stir lightly, cover and steam on a low heat for 10 minutes or until the vegetables are cooked but not soft. If the pan dries out add a tablespoon of water.
