Frittata

 

 

 

Ingredients

 

1 Tin mixed vegetables

1 medium sized potato

1 large onion

1 peg garlic

4 eggs

3 tbsp milk

1 tsp salt

Salt and pepper to taste

2 tbsp oil

 

 

Method

 

Heat the oil in a frying pan and sauté the onions until soft. Wash and dice the potatoes into small squares and then add to the onions and fry until potatoes are soft. Drain the tin of mixed vegetables and add to the mixture. Beat the eggs until frothy and add salt, garlic, black pepper and milk then add to the mixture. Turn the flame down and cook until a knife inserted into the frittata comes out clean. Served warm or cold with a crunchy salad.
