




Lemon Roast potatoes
Ingredients
1.5 Kg baby new potatoes
4 tbsp olive oil
Finely grated rind of 2 large lemons
Juice of one large lemon
1 tbsp sugar (optional)
Salt to taste
Method
Heat the oven to gas mark 5, 375F. Bring a pot of water to the boil add the potatoes and bring the pot to the boil. Then cook for 5-7 minutes removing before thoroughly cooked or soft.
Mix the olive oil, lemon juice and rind, sugar and salt together and place in a large bowl. Drain the potatoes thoroughly and mix into the marinade, stirring so that all of the potatoes are covered. Place on an oiled oven roasting tray and roast for about 25 minutes until cooked, turning and basting occasionally.
