 Pumpkin Rice

 

 

 

Here’s a useful way to use leftover bits of pumpkin

 

 

 

Ingredients

 

1 Mug of peeled and diced pumpkin

1 cup of Rice

1 tablespoon of low salt vegetable stock

 

 

Water to cover the rice by ½ inch

 

 

 

Method

 

Wash and rinse the rice. Place in fresh water and bring to the boil. Add the pumpkin and vegetable stock, stir and then cover and turn the fire down so the rice gently cooks for about 20 minutes. If the water dries out before the rice is cooked add no more than ¼ cup at a time and let it steam through the rice
