




Rita's Vegetable Crumble
Ingredients
2lbs Mixed vegetables
1lb Whole wheat flour
6oz ½ fat Margarine
6oz ½ fat cheese
Pinch of Salt and black pepper
1 Vegetable stock cube
Cheese sauce or a rich gravy or sauce (Optional)
Method
Marinate the vegetables with the stock cube, salt and pepper. Then stir fry them with 1 oz of margarine for five minutes. Put in flan dish. Make up the cheese sauce or gravy if using and pour over the vegetables. Rub the remaining margarine and the cheese into the flour to make a crumble. Layer the crumble mixture smoothly on top of the cheese sauce and bake for 15-20 minutes. Gas mark 8
