




Pineapple Ginger Cooler
Ingredients
1-4 inches of fresh peeled and sliced ginger depending on your
taste. (The more ginger the more fiery the taste)
The peel of 1 Pineapple, (it’s easier if you wash the pineapple before peeling)
Sugar to taste
Method
Place the pineapple peel and ginger in a pan. Cover with water and
bring to a boil. Allow to simmer for 20 minutes. Taste the mixture to
see if it is to the strength you like, if not continue to simmer for a
further 10 minutes to make it stronger. The pineapple flavour will
develop once it is cooled. Remove from the heat and allow to cool.
Once cool pour the liquid through a sieve. Add sugar to taste and stir.
Remember that adding ice will dilute the taste.
