




Sweet corn fritters
1 Tin Naturally sweet corn
1 large onion diced
1/2 - 1 cup self raising flour
2 tbsp thyme leaves or sage
1 red sweet pepper de-seeded and diced
2 eggs beaten and seasoned with salt, black pepper, garlic powder and 2 tbsp milk
Method
Place the diced onion, sweet peppers and thyme leaves in a large mixing bowl, add the beaten eggs with the seasoning added and stir gradually. Add the self raising flour, stirring after each addition. Continue adding the flour until the mixture is a thick (doesn’t run) but drops from the spoon. Heat some oil in a frying pan and drop a spoonful of the mixture in a pan pressing down with a spatula to make a flat oval fritter. Fry on both sides until golden brown and cooked through.
Can be eaten hot or cold. Ideal for picnics
