




Phyllis’ 2 colour Rice delight (serves 4)
A simple and quick rice dish for those times when you want something special for the table but don’t have the time for a complicated recipe.
Ingredients
2 cups of basmati rice
1 chopped onion
½ tsp of turmeric
Salt to taste
1 tbsp butter
2 tbsp of sunflower oil
1 inch of a cinnamon stick
3 cardamom pods
Method
Boil the rice until tender. In another saucepan using the oil and butter cook the onions, cinnamon and cardamom seeds until the onions are golden brown. Add the turmeric to this mixture and stir in. Then add the cooked rice and lightly stir so not all of the rice is coated – so giving the two coloured rice effect.
