




Aubergine Caviar Wrap
Ingredients
1 Californian wrap
1 small aubergine
1 clove garlic
1 tbsp lemon juice
1 tsp olive oil
Method
Slice the aubergine in ¼ inch lengthwise strips
Using a sharp knife cut crisscross lines across the strips and rub the garlic into those areas. Pour the olive oil over the strips and grill for about 5 minutes on gas mark 4 or until the aubergine is transparent.
Mark the soft aubergine with a fork or potato masher, place 2 tablespoons in
the centre of the wrap and top with shredded lettuce and tomatoes. Cut the wrap in half for easier eating and enjoy.
