




Chinese Cabbage Salad (Serves 4 as a side dish)
This is a crunchy salad which adds a contrast to softer salads, it is quite robust and so suitable for lunch boxes.
Ingredients
4 large leaves from a firm Chinese cabbage
4 large spring onions
2 tablespoons of mayonnaise
Salt and coarsely ground black pepper to taste
Method
Wash and drain the Chinese cabbage leaves and place on a chopping board. Chop into thin shreds and then at an angle to ensure even small pieces a little larger than rice grains. Place in a large mixing bowl. Remove the outer leaves of the spring onion, wash and cut thin slices across the white base and stalk. Cut these in halves or quarters and then add to the bowl. Add the mayonnaise a tablespoon at a time and mix thoroughly. If desired add salt and black pepper to taste.
Since the size of spring onions and Chinese cabbage leaves vary and bearing in mind that you may like more or less bite in this dish be prepared to add more of individual ingredients to suit your taste.
