Sandra's Delicious Eve's Pudding

 

 

Ingredients

 

 

6 oz margarine

6 ox of sugar

6oz of flour

2 eggs

4 table spoons of milk

Cinnamon and nutmeg to taste (a pinch of each)

 

 

 

For the filling

 

5 eating apples or a tin of pie filling

One tablespoon of sugar

Three tablespoons of water

 

 

 

Method

 

Pour the eggs, milk, sugar and margarine into a liquidiser. Mix until all the ingredients are fully blended. Pour into a mixing bowl and add the flour a little at a time mixing it in with a spoon until all the flour has been added. Then add the cinnamon and nutmeg to taste and mix in, by now the mixture will have thickened.

 

 

 

Coarsely grate the peeled and cored apples and place them on the bottom of a deep pie dish or a casserole dish. Add the water and sprinkle the sugar on top of the apples. Spoon the sponge mixture over the apples, ensuring that the mixture is evenly spread.

 

 

 

Put the pudding on to the middle shelf of a pre warmed oven - gas mark 6 at 200C, or 400F for thirty /thirty five minutes when a knife inserted into the sponge comes out clean – without any mixture sticking to it then the sponge is cooked. If you gently push the knife into the pudding and some of the mixture is on the knife when you remove it give the pudding a further five minutes.

 

 

 

Serve hot with cream, ice cream or custard.
