




Microwave Christmas Pudding
Ingredients
3oz plain flour
1 tsp ground mixed spice
1tsp nutmeg grounded
1 oz fresh ground breadcrumbs
3oz Demerara sugar
3oz molasses sugar
4oz sultanas
4oz seedless raisins
4oz ready to eat dried apricots chopped
1 tbsp hazelnuts
1 tsp orange rind
1 small eating apple (peeled, cored and grated)
3 Fluid oz milk
3 oz butter or block margarine
2 oz plain chocolate
1 medium sized beaten egg
Method
Lightly grease a 1 pint basin and line with grease proof paper. Sift flour and spice into a bowl. Stir in breadcrumbs, sugars, dried fruits, hazel nuts, apple and orange rind. Place juice, milk, butter and chocolate in a small bowl and microwave on defrost for 2 minutes until melted. Add to dry ingredients, mix well and stir in egg. Spoon into the basin, Cover with grease proof paper. Microwave on 650 watt for 5 minutes. Leave to stand for 5 minutes then microwave for a further five minutes. Turn out, and stand for 5 minutes before serving.
