




Jamaican Fried Dumplings
Ingredients
2 cups flour
¾ cups water
1 tsp salt
2 tsp baking powder
2 tsp vegetable oil
Method
Add the dry ingredients to a bowl making sure it is well blended, add a little water and slowly work into the flour, continue adding the water until completely absorbed into the mixture. Knead the flour until a rubbery texture is achieved and until it does not stick to the hands. If that happens, just add a little flour.
Tear the flour into 1 ½ inch pieces and roll each portion into a smooth ball then slightly flatten each piece with the palms of your hands (doughnut like) and set aside.
Heat the oil in a frying pan on medium heat and once hot add the pieces to the pan. When the dumplings start to swell and achieve a golden colour turn them onto the other side. If the dumplings are cooked they will spring back into shape when you press them down with a spatula.
Serve hot with ackee or with salted butter and baked beans for breakfast.
Tip
If you like your dumplings soft and not too crunchy on the outside then when finished cooking turn the fire off and with the frying pan lid in one hand add a teaspoon of water to the pan, carefully covering immediately. Be careful as the hot oil and water will create steam and hiss. The steam will soften the dumpling but too much water will make them soggy.
