Beverley’s noodles oodles

 

 

 

Ingredients

1 packet fine thread Chinese noodle

1 packet bean sprouts

1 cup mixed or freshly prepared vegetables.

Soya or Chinese stir fry sauce to taste adjust to taste

1 small tin sweet corn (if desired)

1/2 onion diced

1/2 sweet pepper deseeded and diced

2 spring onions chopped.

1/2 small or 1/4 large crisp white cabbage shredded

2 tbsp vegetable oil

 

 

 

Method

Boil the noodles and drain as directed on the packet, do not over boil or the noodles will become soggy.

 

Put the oil in a deep frying pan and fry the onion, sweet pepper and shredded spring onions.  Add the Soya sauce a little at a time to taste. Do not over fry to ensure that the crispiness remains.

 

Add the noodles and stir well. Then stir in the bean sprouts and let them warm through but do not overcook. They should remain crispy.

 

Tips:

Stir in noodles with fork for better blending.

 

Bean sprouts go off very quickly so use on date of purchase.

 

Once cooked can be kept in the fridge overnight.

 

Meal suggestion

Serve with Chinese crackers

 

Starters; Chinese leaf and mandarin salad

 

For desert lychees and ice cream or sorbet

 

Finish with Chinese tea or for a cool drink try Peachy punchy.
