Oat patties

 

All the goodness of oats in a tasty crispy form - this is nothing like porridge and it’s versatile enough for hot meals or cold sandwiches!

 

Ingredients

2 cups rolled oats

2/3 cup shredded hard cheese

1 egg

2 tbsp chopped parsley (or other herb)

1 tsp turmeric powder (optional)

Salt

Oil

 

Method

 

Mix the oats with just enough water to cover them and let them soak at least 30 minutes. Then stir in all other ingredients, except the oil. In a frying pan heat a little oil and with a tablespoon add the batter and form 3 – 4 small patties at a time. Cook about 2 minutes and then turn them over and cook another 1 – 2 minutes. Patties should be golden brown and crispy at the edges.

 

Serve with boiled potatoes and a salad, or with tomato sauce and rice. They are also delicious cold in sandwiches or buns with some raw onion and mustard or ketchup.
