Potato slice (serves 4)

 

Ingredients

Two large eggs

2 medium potatoes

A splash of milk

Salt, pepper and garlic powder to your taste

 

Method

Peel and dice the potatoes and then cook in lightly salted water until soft. Drain and place into a small but deep greased deep baking dish.  Beat the eggs with the milk adding the salt, pepper and garlic powder.  Press down the potatoes lightly and then pour the egg mixture over them so that they are covered. Bake on gas mark 5 until the egg is cooked and dry. Remove and leave to cool. Slice and serve.

 

Options

Add grated cheese to the egg mixture or cooked diced vegetables to the potatoes.

 

Tip

You may find you need to add more seasoning than usual as the potato dilutes the effect of the seasoning in the egg.
