




Home made meat free sausages
Ingredients
50g of breadcrumbs
I medium onion finely chopped
2 tablespoons lightly roasted pine nuts crushed
1 teaspoon of finely chopped sage
A pinch of salt
1 beaten egg (or a little Soya milk and flour if preferred) to bind the mixture
½ a teaspoon of black pepper
¼ teaspoon of garlic powder or 1 clove fresh garlic crushed - according to
your taste
Method
Mix all of the ingredients together in a big bowl. Dust your hands with flour
and shape the mixture into sausage shapes (or flat burger shapes if you
prefer). Fry on each side until golden brown and cooked through.
If you find the mixture too wet or breaking apart add a little plain flour to bind
it.
Should be served dry. Makes about 10 sausages. Try tasting the first one
and adjust the seasoning and mixture to your taste if you want a stronger sausage taste add more pine nuts and sage.
