Spicy Homemade Potato Wedges (serves 2)

 

Ingredients

4 medium potatoes

1 table spoon olive oil

¼ tsp fajita seasoning mix (optional)

¼ tsp salt

½ tsp black pepper

½ tsp smoked paprika

 

Method

Wash the potatoes thoroughly and remove any bruised sections of skin.  Slice the potatoes lengthwise into 8 slices (depending on the thickness of the potatoes) then cut each slice into half.  Rinse, drain and place in a bowl. Add the olive oil and seasoning (adjusted to your taste) and then use your hands to rub and spread the seasoning evenly.

 

Place on a baking tray and bake in the middle of the oven for 35 minutes on gas mark 5. (Can be micro waved if you prefer but the end result will be soft and not crisp[)  When a fork enters the flesh of the potato easily remove and serve.

 

 

Optional extra

Add grated cheese (with or without spring onion slices) when cooked and leave in the oven until the cheese melts.
