 Pumpkin, sweet potato and mandarin soup

 

 

 

Ingredients

 

1 onion roughly chopped

1 tablespoon olive oil

1 cup peeled and dried sweet potato

2 inches of fresh ginger ( or powdered to taste)

Juice of one sweet mandarin

Pepper and salt to taste

Vegetable stock if required

 

 

 

Method

 

Gently fry the onion in the olive oil until golden, add 3 cups of water and bring to the boil. Add the pumpkin, sweet potato, ginger and simmer. (if the vegetables do not have a strong taste add some low salt stock to taste).

 

 

 

Cover and simmer until the vegetables are cooked. Remove the ginger and let the pot cool. Then pour the mixture into a blender and liquidise until smooth returning the blended soup to the pot.

 

 

 

Place on the fire on low heat, adding water if too thick, add the mandarin juice and salt and pepper to taste. This can also be used as a base for a chunky vegetable soup.
