Gomes’ Any Vegetable Bake

 

(serves 4)

 

 

You can use whichever vegetables you prefer or have to hand for this dish and your favourite herbs. A great way to use up odds and ends!

 

 

 

Ingredients

1 Aubergine sliced

1 onion diced

Sweet peppers thinly sliced

Carrots thinly sliced and lightly cooked

Fresh herbs as preferred e.g. a few leaves of coriander or basil leaves chopped

1 tsp of oil

1 tin chopped tomatoes or pasta sauce (you can use egg or cheese if you prefer not to use tomatoes)

Salt and pepper to taste

 

 

 

Method

Slice the aubergine into rounds and brush with oil on both sides. Place under the grill and cook each side for a few minutes until soft. Take an oven dish, lightly oil it and place the cooked aubergine along the bottom. Layer the remaining vegetables on top to give alternate layers of ingredients. Sprinkle a little salt and pepper on to taste and pour the tomatoes on top. Bake for 15 minutes gas mark 5 until the tomatoes are bubbling then remove and sprinkle on some fresh bread crumbs and return to the oven for a further 5 minutes.
